As a core non vegetarian.. I try to find ways and means to introduce the NV flavor we always love.. Well, we all know Rasam is a very simple and delicate with its qualities to stand out from other food.. Now I am here adulterating the very original flavor :) But then its definitely worth it..
Lets call it Chicken / Kozhi Rasam... It is just rightly flavored.. with mild flavor of chicken but not over powering like the chicken soup.. and with the usual spice powders used for rasam.. It is just heaven !!
U know what.. Don't take my word.., u should just try em.. :)
After learning about this recipe..I just could not wait to try my hands on this.. Yea right.. I made this for the very next meal.. Now all we need is a chicken stock.. Which I generally don't have at home.. As in not readymade.. I love home made stock.. Atleast in this dish.. it was easy to just start cooking...
KOZHI RASAM
Ingredient
Chicken - 2 no. [leg quarters]
Tomato - 1 no.
Onion - 1 no.
Garlic - 2 pods
Turmeric Powder - a pinch
Chilli Powder - 1 tsp
Coriander Powder - 1 tsp
Cumin Powder - 1/2 tsp
Green Chillies - 1 no.
Salt - as required
Coriander Leaves - little
Preparation
- In a pressure cooker, Add Chicken, onion, tomato, garlic, green chilli, turmeric powder and salt.. leave two whistles..
- Take the chicken separately and debone them.. Save the shredded chicken and throw back the bones into the rasam..
- Bring it to boil and add chilli, coriander and cumin powder.. adjust salt.. and coriander leaves and serve...
Tips & Tricks
1) Save the shredded chicken for later use..
2) You can season the rasam like we normally do.. but this itself was perfect :)
3) Do not add the spice powders when pressure cooking... It alters the flavor...
I used the shredded chicken saved from the rasam dish...for the following recipe..
PEPPERY SHREDDED CHICKEN
Ingredients
Shredded Chicken - 250 gms
Pepper Powder - 1 tsp
Soya Sauce - 1 tbsp
Onion - 1 no.
Onion - 1 no.
Red Chilli Flakes - 1 tsp
Salt - as required
Cooking Spray
Preparation
- Heat tawa and moisten the dish with cooking spray
- Slice Onions and Saute
- Add Chicken, pepper powder, soya sauce, chilli flakes and salt... Saute until flavors are nicely together..
- And Serve..
Tips & Tricks
1) For Shredded Chicken - Boil chicken with salt, turmeric and pepper powder.. and debone..
2) I powdered the whole red chillies for flakes..
We initially planned to make just the rasam.. then we made this yummy chicken and rice to make it a complete meal.. Just enjoyed this combo to the core.. Loved it !! U can also serve this as an appetizer..
