STRAWBERRY SHRIKHAND

This is my 25th Post.. Yay !! And I really wanted something special for this milestone.. I wanted to make a Sweet dish and all I had in my drafts were not anything close to Sweet.. mostly, wanted to make something then to grab and edit any draft.. I was telling Hubby about this and He came up with couple of ideas.. Then all I had to do was to just pick one :).. with couple of factors in mind.. ingredients at home, easy to make, less fattening.. and couple of other ones.. 

These days appetite for eating is gone low and appetite for creating, or maybe trying new things have grown a little more than my usual lazy days.. well, as far I am not growing anymore, Horizontally :) or at least I try to fit into my clothes since its all new :) 

So , We decide to make, actually have been wanting to try this for a while now.. Shrikhand ! I remember tasting this once from Indian stores.. To be honest, I did not like the first spoon.. but how did the box get empty.. thats a different story and I have nothing to do with it.. :) I remember bookmarking Amarkhand from one of my favorite sites.. Since I did not find any mangoes in this vicinity , decided to use some strawberries.. while I had my doubts before making, it was a total blast after tasting ! In a good way :)




Shrikhand , Is a very famous dessert in Gujarat and Maharashtra.. Its even served as dessert in Thalis, because it is a perfect couter part with the spicy curries.. Although , originally it was just Shrikhand with just the sweet sourness of yogurt.. People improvised it with vibrant flavors.. and one of the famous ones till today is Amarkhand where in mango puree is included.. And ofcourse, we dont stop there... it went to   using chopped fruits.. tutty fruity.. and also Strawberry ! 




This is a very simple dessert and requires less time if you use store bought curd, and feel free to use any fruit of ur choice.. it can never taste bad.


Servings - 2
Preparation Time - 15 mins
Cooling Time - 1 hr


Ingredients


Strawberry - 10 no.
Curd/Yogurt - 1 cup [strained]
Sweetener - 5 sachets
Cardamom Powder - a pinch




Preparation 

  • Strain the curd for an hour with muslin/cotton cloth to drain most of the water.
  • Puree Strawberries by adding few drops of water and strain the mixture. Now u will have a thick sauce.
  • Take the strained curd in a bowl and add strawberry puree to it until u get the desired color and flavor.
  • Add cardamom powder and sweetener to it.
  • Now blend everything together nicely and smooth.. 
  • Chill and Serve.
Tips & Tricks

1) Check the sweetness of the mixture before adding sugar, as fruit gives some sweetness already.
2) Do not add more water to make puree.. it will spoil the consistency. Remember, we need puree not juice :)
3) I used Handkerchief for straining curd and it worked !

Lovely photos and a nice presentation. This sounds delicious and so simple too. I make labnah sometimes which is straining yogurt overnight or longer. That would make this more of a pudding to eat with a spoon rather than a drink. Thanks for visiting and following my blog.
