Chicken Soup

Chicken soup is my all time favorite, no one makes it perfect like my mom. when any of us fall sick at home .. my mom would start the soup marathon right away.. she serves with just plain rice, it cannot taste any better when mommy makes it for u. 


My Husband loves Chicken Soup to be paired with Idiyappam/Rice Noodles, he says there is no better combination and he calls it uppu - saaru. 



Chicken Soup is a very lite dish and very very easy to make, it takes so less time to actually cook this recipe.. This soup is so healing sometimes, I feel so soothing and relaxed after I get to have a huge bowl :).. I learned this recipe from my mom and gave my twist to it. If it is a one pot meal, I generally add a handful pasta in to make it wholesome.. recently am trying so hard to not to use even a drop of oil in my cooking.. So here is my first post on my attempt to get healthy.. Guys, u should really trust me on this.. it tastes excellent.


Ingredients


Chicken - 1 pound
Shallots - 250 gms
Tomato - 1 no. (small)
Ginger Garlic Paste - 1 tbsp
Green Chilli - 1 no.
Pepper Corns - 1/4 tsp
Turmeric Powder - 1/2 tsp
Pepper Powder - 1 tbsp
Shells - a handful 
Mint Leaves - fist full
Coriander Leaves - fist full
Salt - to taste

Preparation
  • Put all the ingredients in the pressure cooker.
  • Leave two whistles
  • Serve it hot.

Tips & Tricks

1) I generally like the soup the way it is, if served with idiyappam or rice..
2) Although if that is the actual meal itself , I add hand ful pasta or rice .
3) Add some cut veggies like carrots , beans and also whole beans.. lima beans , double beans just blends in so well.. and tastes so much better.
4) Cut out all the fat from the chicken and make the meat as lean as possible.. and make the meal as healthy as possible.

That's a most unusual chicken soup, Jabeen. My mother just used a lovely broth and either swirled some eggs into it, made little egg dumplings or added some fine noodles. Your flavors are more complex. I love the idea of making this in a pressure cooker!
