GUEST POST_CREAM OF SQUASH

I am finally here posting my First Guest Blog.. I should say it feels nice.. I would definitely like to thank my very Dear Friend Cooking - Varieties to have started this new event and series of guest posts.. and giving me a chance to be a part of it.. Do visit her blog for her extraordinary work and her wonderful recipes.. 




The "Topic" ingredient was SQUASH.. After a long hunt for a squash family member.. I finally settled for yellow squash.. and working with this for the first time. 




Well, decided to make a guilt free soup with no oil or any kind of fat.. Lately I have been trying to discover oil free foods.. and this wonderful bowl definitely tops the charts. . Its a whole meal by itself. To be honest, I was slightly surprised by the amazing creamy soupy consistency it finally had..




To make this dish is very less time consuming.. and very less labour and what u get out of this is just amazing.. 


One can use masoor dhal / moong dhal ... I have tried only with them so would suggest.. It tends to get easily burnt at the bottom when pressure cooking.. U might want to check if u even smell a hint of burnt aroma.. U can use any variety of squash..

wow, this looks SOOO good! love the idea of using a pressure cooker! i bet you could even use an electric pressure cooker/rice cooker, to keep it from burning on the bottom. or maybe even steam it!

This soup looks lovely and I am sure you can also use vegetables of the same family, i.e. zucchini - can't wait to give it a try and top it off with a dollop of sour cream and a sprinkle of Parmesan. Thank you.
