BONJOUR SERIES # 1 - KABSA


I am here posting the inaugural post for my new series - Bonjour !  I started this to be a biweekly series.. but happily, the responses were really overwhelming , so decided to turn it to a weekly series :) YAY !! Good for Me !!

For this weeks post.. Our Guest Blogger is Jehanne from " The Cooking Doctor ". She really is a cooking Doctor. A surgeon by profession, I ought to admit that I have thought "How on Earth does She have time to manage a wonderful blog".. not just any blog people, a truly professional blog. She writes very clearly, Pictures are out the roof, and the dishes are authentic and fancy too.. I am just so in love with her space.. :))

CHICKEN TWO WAYS

We were watching videos on youtube and came across a few interesting and new version of ordinary existing recipes.. It is definitely nice when we are able to give a new look and feel to our routine way of cooking.. Not that I always do :) 

As a core non vegetarian.. I try to find ways and means to introduce the NV flavor we always love.. 
Well, we all know Rasam is a very simple and delicate with its qualities to stand out from other food.. Now I am here adulterating the very original flavor :) But then its definitely worth it..

CHICKEN BIRIYANI

Biriyani is a favorite dish for everyone.. People customize their spices to their taste buds and the cooking patterns.. ranges from Dum Biriyani to Kachi Biriyani to Malabar biriyani, well I could just keep going on..


I so badly wanted to master the art of Biriyani.. and yes I did, two of a kind.. Kerala and Tamil Nadu Biriyani.. Well, It was more of pressure on me to learn this delightful food.. friends expected me to make this perfect "Muslim Biriyani".. I initially learnt Kerala Biriyani.. and it was a super duper hit.. people started calling it "Jabeen's Biriyani " and finally some food is named after me.. :) I will soon be posting it here..

Pallipalayam Chicken

Well, it was such a long day.. and at the end we really had to pamper ourselves with spicy tasty meal.. We didn't want to make the usual stuff, so decided to browse to find something quick and tasty.. It was so cold this evening and something spicy would do real good.. Then it suddenly struct, I did bookmark something from cilantroonline.com.. Thank you dear for the recipe..It is such an easy dish with very little ingredients and very less labor.. don't we all like that..? It is a dry dish and definitely topped my charts.. :)

Chicken Fried Rice

It was dinner time , I planned on making soup but then of course my husband said it doesn't sound like a weekend.. then we talked thro' couple of options , I only prayed we would arrive on something quick to make.. and yes we did.. FRIED RICE  , thou' it was not so quick like a soup.. it is definitely worth waiting for. :) and a bonus - he promised to help me thro'.. It's always fun to have company in kitchen.. isn't it? now, lets get cooking..

Chicken Soup

Chicken soup is my all time favorite, no one makes it perfect like my mom. when any of us fall sick at home .. my mom would start the soup marathon right away.. she serves with just plain rice, it cannot taste any better when mommy makes it for u. 


My Husband loves Chicken Soup to be paired with Idiyappam/Rice Noodles, he says there is no better combination and he calls it uppu - saaru.

CHICKEN 65


Ingredients

For Marination

Chicken - 1 lb (cut in medium cubes)
Ginger Garlic Paste - 1 tsp
Pepper Powder - 1/2 tsp
Corn Flour - 1 tbsp
Egg - 1 no.
Salt - as required

Oil - for frying

Seasoning

Oil - 3 tbsp
Cumin Seeds - 1 tsp
Ginger (chopped) - 1 tbsp
Garlic (chopped) - 2 tbsp
Green chilli - 1 no.
Curry lvs - 1 stem
Ginger Garlic Paste - 1/4 tsp (optional)
Pepper Powder - 1 tsp
Chilli Powder - 1/4 tsp
Cumin Powder - 1/4 tsp
Chilli Sauce - 1 1/2 tsp
Red Colour - 2 pinch (mixed with very less water)


Preparation
  • Place the chicken pieces in a bowl , then add salt, pepper powder, ginger garlic paste, corn flour and mix well with hand,,, then add whole egg ,mix well again...lets it rest until the oil gets hot for frying........Fry them well on a medium flame ,,set aside
  • On a skillet, lets start seasoning.. add oil, splutter cumin seeds , put chopped ginger and fry for a minute, then garlic, green chillies, curry lvs,ginger garlic paste one by one ..let it fry for 2 mins on a low flame ..make sure not to burn them.
  • Once its done ,,add pepper powder, chilli powder, cumin powder and then add chilli sauce and red colour.. fry for a min..
  • Now add the fried chicken pieces to the skillet, mix them...let the seasoning coat well on the chicken .
  • Serve them, on the bed of lettuce.

Tips & Tricks

Make sure to check the spice level before adding the chilli sauce,, and add accordingly.

EGG CURRY


Ingredients

Egg - 4 no.
Onion - 2 medium sized
Tomato - 1 big
Green Chillies - 2 no.
Ginger Garlic Paste - 1/2 tbsp
Chilli Powder - 3/4 tsp
Coriander Powder - 1/4 tsp(optional)
Turmeric Powder - 1/4 tsp
Corainder lvs - for garnishing
Cinnamon - 2 small piece
Cardamom - 2 no.
Cloves - 2-3 no.
Salt - to taste


Preparation
  • Boil eggs for 20 mins . Remove the shell and wash them and keep aside.
  • In a vessel and some oil and splutter the whole garam masala's and then add thinly sliced onions,salt,green chillies and fry until the onions are golden brown
  • Now add ginger garlic paste and fry for two mins and then add tomatoes, wait for it to soften and now add chilli ,coriander and turmeric powder to it.
  • Once everything gets all blended and looks together, check salt .
  • Cut the egg into halves and add them into it. mix them gently
  • Garnish with freshly cut coriander lvs... serve hot.

Tips & Tricks

To have a hard boiled egg, leave the egg in the boiling water even after the stove is off for 10 mins or so.
