Nonbu Kanji / Rice - Lentil/Veg Porridge

Hey Guys, I am here posting the very first entry - 2012 for the blog hop wednesday. Kudoos to Radhika for keeping it really organized and hats off for her time and hard work that she puts into this event. Bravo Girl ! I am so enjoying and loving that I am a part of this journey.. :)

Today , I am paired with Divya from Divya Z Easy recipes. She is a very good friend of mine.. I love her blog for her simple , easy and day to day recipes.. So for today I chose Nonbu Kanji from the hop.

Nonbu Kanji is a dish that we make during Ramadhan.. This is a must dish in our house for Iftar - when we break the fast in the evening. It is super combo with Masala Vadai. Or that's how I like it. :) Here is the recipe for you guys.. and more, this recipe is very customized to suit our healthy lifestyle.. for those who would prefer oil-free cooking. Well, It works for me every time I make this.. :)

Ingredients

Basmati Rice - 3/4 cup
Moon Dhal - 1/4 cup
Onion - 1 [small - chopped]
Tomato - 1 [small - chopped]
Carrot - 1 no.
Beans - 4-5 no.
Green Chilli - 1 no. [slit]
Ginger Garlic Paste - 1 tbsp
Mint Leaves - a handful [1/4th bunch]
Coriander Leaves - for garnishing
Water - 4 cups
Salt - as required

Preparation

  • Throw all the ingredients into a pressure cooker.. and let it whistle 3 times or until the rice is all mashed up.

Tips & Tricks

1] After 3 whistles.. Check if the rice is mashed up.. if not try to do it urself or put 1/2 glass of extra water and let it whistle once again.
2] I generally add Carrots, Beans and Peas.. Have not tried anything else.

Oftentimes, my mother prepares porridge for breakfast along with vegetables and fruits. It has been six years since we got the chance to talk. You have just reminded me of my caring and loving mother. I miss her a lot. How I wish I could turn back time and ask her to cook this recipe in the kitchen.
